Broccoli and Rice Casserole

  • 3 tbsp. butter
  • 1 1/2 cups rice, uncooked
  • 1 can chicken broth
  • 1 can chicken soup
  • 1 small bag frozen broccoli
  • Salt & pepper
  • 4 slices cheese

In a large skillet, melt butter. Add rice and stir. Add chicken soup and chopped broccoli; mix well. Cook for 10-15 minutes, then add soup on low heat and cover until rice is cooked. Place in casserole dish and add cheese and cover. Bake at 350 degrees until cheese is melted.

Serves 8-10
