Home Made Cheese Quesadilla’s

My daughters love to help me make these treats before we sit down for movie night! It’s a great break away from the norm of popcorn!

Cheese Q

Flour Tortilla Shells:

  • 4 cups of flour
  • 3/4 cup shorting
  • 2 tsp. salt
  • 1 tsp. baking powder
  • 1 1/2 c. warm water

Kneed it out on a lightly floured surface until round and smooth. Separate into 18 round balls. Flatten with hands and then roll them out. Fry them on a griddle at 400 degrees for 45 seconds each side.

For the quesadilla’s:

  • 2 c shredded cheese, I used marble jack because it is what we had
  • 1/4 cup sour cream (I used Top The Tater because It’s what we had)
  • 2 TBS butter

Mix cheese and sour cream together.

Put butter in griddle/fry pan add one tortilla fry it for 30 seconds. Sprinkle cheese mixture on and fold shell in half. Turning often; keep frying until cheese is melted. Cut each into 3 wedges.

Serve with Salsa!
