If you are short on time but need big flavor, try this fast recipe that will leave your family saying, “Wow, dinners done already?” And, “That was very good, thank you”. I serve this the way my Mom did when I was a little girl, with a slice of peanut butter bread! MM MM Good!
- 1 lb ground hamburger
- 1 onion, chopped
- 1 garlic clove, minced
- 1 package macaroni noodles, cooked
- 2 cans stewed tomatoes
- 1 small can tomato paste
- 1 can black beans, rinsed and drained
- 1 tsp olive oil
- 2 tsp chili powder
- 1 1/2 tsp ground cinnamon
- salt, pepper, season salt to taste
In a large chef pan, heat the olive oil then add the chopped onion and minced garlic. Sprinkle a tiny bit of salt and pepper on top. Cook for about 3 minutes on medium heat. Add the ground hamburger. Season the meat with salt, pepper, and season salt to taste. Continue cooking until no longer pink. Drain any grease and set aside. While the onion and garlic are cooking, put a large pot of water on to boil your macaroni noodles. You will use that pot to mix everything at the end so make sure it is large enough. A Stock pot or spaghetti noodle pot works great. When the noodles finish, drain them and leave them in the strainer for a minute while you use the pot.
In the large pot, add the stewed tomatoes, tomato paste, black beans, cinnamon and chilli powder. Stir and heat on medium until just warm. Add the macaroni noodles and the meat to the pot. Stir to combine. Heat until flavors meld.
Serve this with peanut butter bread and a green salad on the side.
