Wild Rice and Lentil Soup

This week has been cold with a capital C, and very stressful to boot. Tonight I’ll calm the chaos down with the scrumptious aroma of this delicious soup. Put a loaf of whole wheat bread into the bread machine for that extra “at grandma’s house” smell!

  • 1 TBS olive oil
  • 2 shallots, finely diced
  • 2 small onions, chopped
  • 3 carrots, peeled and finely diced
  • 2 stalks celery, finely diced
  • 1/2 large red bell pepper, finely diced
  • 1 clove garlic, minced
  • 1/3 cup wild rice, rinsed and drained
  • 1/3 cup French green lentils, rinsed and drained
  • 4 1/2 cups water
  • 1 vegetable bouillon cube (optional)
  • juice of 1 lemon
  • 3/4 tsp salt or to taste
  • 1/2 tsp cumin
  • 1/2 tsp thyme
  • pinch cayenne pepper
  • pinch black pepper

Heat oil in a large soup pot. Sauté shallots, onion, carrots, celery and red bell pepper until tender, but still crisp, about 2 minutes. Add garlic and sauté for another minute. Stir in wild rice, lentils, spices, and water. Bring to a low boil, cover and simmer for 30 minutes or until wild rice and lentils are tender.
