Vegetarian Taco Pizza

  • 1 can organic re-fried beans
  • 1 pkg organic taco seasoning
  • 2 cups cheddar cheese
  • 4 TBS mild organic salsa
  • 4 TBS cilantro, chopped
  • 2 cups crushed corn chips
  • 1 cup fresh spinach leaves

Heat beans in a pan on a medium heat until hot, add taco seasoning. Stir to fully incorporate. Remove from heat.
Use half of the ingredients for one pizza.

Spread bean mixture onto prepared fresh pizza dough. Spread salsa over beans. Sprinkle cilantro onto salsa. Sprinkle crushed chips over all. Spread cheese on top of chips.

Place in a preheated 375° oven and bake for 10-11 minutes. Remove from oven and immediately place spinach on top.

Let cool then cut and serve.
Makes 2 pizzas.

Pizza Dough

  • 1 package Dry yeast
  • 3 tablespoons Butter
  • 1 1/2 teaspoons Salt
  • 1 cup Water
  • 1 TBS Sugar
  • 2 cups Flour
  • 1/2 cup Whole Wheat Flour

Add sugar and dry yeast to the cup of warm water. Let stand 10 minutes. Add the butter, salt and flour. Stir well, turn out and knead until dough is smooth or use an electric mixer with the dough hook attached for 5 – 7 minutes on medium. Cover and allow to rise in a warm place for one hour. Punch down and allow to rise again one hour.

Roll dough to 1/4 inch thickness to fit pizza pan. Leave to rise again while you prepare the filling.

Makes enough dough for 2 pizzas.

    Awesome pizza! I loved that there was no lettuce involvd in any way, shape, or form. The bit of cilantro and spinach was perfect and the use of the salsa was a complete success!
