Almond Crescents

14 Jan

These little bites of yum are on my top five favorite cookie! Living in Minnesota leaves little time to get outside and play so we parents have to come up with thousands of activities per day to entertain our children. Baking is a really fun activity that I like to use as a teaching tool. I enjoy making these with my kiddos and I hope you enjoy making them with your family too!

  • 3/4 cup confectioner’s sugar

Add the sugar gradually and cream with

  • 1cup butter

  • 1 cup ground blanched almonds
  • 2 tsp vanilla

Knead in by hand until completely mixed:

  • 2-1/2 cup sifted all purpose flour

Preheat oven to 350°F.

Chill the dough and roll it to the thickness of 1/4 inch. Cut or form into crescent shapes.

Bake the cookies on greased cookie sheet about 15 minutes.

When baked, dip them in:
  • confectioner’s sugar or vanilla sugar

I’m going to give this a try with almond flour. Here’s hoping it’s not overkill but these look incredible!
